APPLE CAKE

Rain and rain.  Everyday has been raining, especially in the afternoon.  Actually I like rainy weather, cold and comfortable. On a quiet day listening to the rain and to savor a slice of cake with a cup of hot tea is an enjoyment in life.

This apple cake tastes better as it keeps longer.  Green apples give the cake a good bite.   

Slice 2 Granny Smith thinly and soak in salt water until ready to use


Peel 3 Granny Smith and dice into cubes.  Boil apples in water (cover the apples) with sugar, cinnamon, vanilla pods and cloves in a saucepan till soft and set aside

250g cake flour, 250g butter, 200g light brown sugar, 3 large eggs, 1 tbsp plain yogurt, 2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon powder, 1/2 tsp ginger powder, 1 tsp vanilla extra

Cream butter and sugar
Add in vanilla extract and eggs, one at a time, and yogurt till mixture is light and fluffy.
Add in diced apples and mix thoroughly
Pour into baking tin.
Drain sliced apples thoroughly and place them on top of cake batter still fully fill
Bake at 170C for 50 mins (Cover the cake with a piece of paper to prevent the cake for being
  browned too early)
Poke cake with skewer and is ready when skewer comes out clean
Glace the apples with jam while cake is still hot
